The Jalapeno pepper is named after the Mexican city of Xalapa, a traditional pepper-growing region. However, Mexicans also know it by its other names, Chilean pepper, meaning "fat pepper," and cuaresmeno, referring to its traditional place on the Lent table.
These round, thick-walled fruits are only 3 1/2 inches long and about 1 1/2 inches wide, and are mass-produced on very vigorous 26-inch plants. Although they are typically eaten fresh or pickled in their green stage, the fruits turn red and sweeten when ripe, if permitted.
